Coconut paleo cookies

This soft cookie recipe is best with freshly shredded coconut. It contain less carb than her siblings made from sugar and flour, and do not forget for this is the reason why is much more healthier.
It is very easy to prepare and can be served near tea or coffee, store in airtight container or pop few in your lunch-box.




Ingredients:

150 gr almond powder
150 gr shredded coconut
2 large eggs
5 gr Stevia + 1 gr drizzle on the top
1/2 teaspoon baking powder
3 tablespoon coconut oil
3 tablespoon coconut milk

1. Preheat oven to 180 C.

2. Place all the ingredients in a blender and blend it well.

3. Scoop about 1 tablespoon of dough onto the baking sheet or greased pan and smooth the top to form each biscuits. Bake for 15-18 minutes. Drizzle some Stevia on the top while is still hot the cookies.
