Hungarian sweet cheese or ricotta pie 


As you can see one of my favorites is ricotta. Back in my home country we have a special sweet cheese what we use for this delicious pie. It is also a very easy and tastefully dessert. Do not forget to use bio lemon peel.





Ingredients :
14 dkg sugar
450 dkg flour
20 dkg unsalted butter
3 tsp baking powder
1 egg
1 tbsp yogurt


Filling :
0,5 kg ricotta 
1 tsp vanilla
2 tbsp milk
half bio lemon peel
2 egg
1 tbsp semolina or grits


1. Combine the flour, baking powder and butter, mixt until the mixture resembles fine breadcrumbs. Add the sugar, egg and yogurt. Process until the batter just starts to come together. Divide the batter into 2 balls and chill them for 35 minutes.

2. Mix the ricotta, vanilla, lemon peel , grits and yolks. Whisk the 2 white egg whit a pinch of salt and fold is slowly in the mixture of ricotta.

3. Preheat oven to 185C.

4. Whit floured rolling pin roll one of the ball and fit in the pan, press firmly. Add the filling onto. I use a 22*30 cm pan and before to put the batter in the pan i use to lightly greased whit a little butter.

5. Roll out the other piece of batter and place over the filling, press firmly. Cut few slits in top to allow steam to escape.

6. Bake it for 40 minutes.
Wait until is going cold so you can sprinkle with  caster(icing) sugar.
