Polenta lemon cake

This is a very easy and delicious lemon cake recipe, you can leave the lemon if you don`t like the taste. Serve it with a cup of milk, jam, icing sugar or whipped cream for breakfast, dinner or as a dessert. 




Ingredients, 1 cup =250ml

1 cup polenta (yellow cornmeal)
1 cup semolina
1 cup white flour
1 cup milk
half cup sugar
half cup oil
2 eggs
1 tspn baking powder
half tspn baking soda
1 lemon zest



1 Preheat the oven to 180C.

2. In a large bowl mix the semolina, polenta flour, baking powder and baking soda.

3. In another bowl whisk togather the eggs and sugar, stir it well until mixture has turned a very pale yellow. Add the oil, half lemon zest and milk and stir it well.

4. Pour the egg mixture in the flour mixture. Stir it a few times with a wooden spoon.

5, Pour the mixture in a lightly greased pan 21*21 cm and bake for 25 minutes or until a toothpick inserted in center come out clean. Pour the other half of lemon juice on the cake after it baked, but is still hot.
