German potato salad or Kartoffelsalat


This is a yummy and very old recipe, I learned from my grandfather back in Transylvania. Potato salad is loved in Germany, it goes well with a variety of dishes, including Schnitzel, Wurst and other meat dishes. There is no "typical" recipe for the German potato salad, every region makes in different way. The only common thing is cooked potatoes and onion. Recipes differ on type of potatoes used, freshly boiled potatoes or potatoes boiled the day before, temperature of the salad when served, and ingredients. Some recipes use mayonnaise, apples, eggs, bacon, garlic, wurst,pickles, vinaigrette, some use chicken broth, or combination of these.




Ingredients:

 0,5 kg potato
2 cloves garlic
1,5 medium onion
2 eggs
3 tbsp olive oil
1 tspn salt
half tspn ground black pepper
parsley


1. Cook the eggs and wait until cools completely, when is cold cut them in slices or cubes.

2. Cook the potato in a salt water. When is ready boiled (when is tender pierced with a fork) let it too cool down. When the potato is cold (when the potato does not burn your fingers) peel off and cut in cubes.

3. Cut the onion in slices and put in a large bowl. Add the potato cubs to the onion mixture and sprinkle with salt, smashed garlic and oil, stir it.

4. Add the eggs to. Cut the parsley and garnish the salad with them.
