Cacao cake (dairy free, flour free and processed sugar free)
I forgot to post this super delicious and easy to make cake recipe. After I was asked on Instagram a few times about the recipe, so here it is :
Cake base
large eggs
tablespoon cold water
1 tablespoon coconut oil or olive oil
1 teaspoon lemon zest
teaspoon Stevia or Xilit (any not processed sugar)
1/4 teaspoon baking powder
3 tablespoon coconut flour
1 tablespoon arrowroot or tapioca/casava flour
Cream
1 tablespoon cacao
1 can coconut cream
1/5 tablespoon honey
2 tablespoon coconut powder
100 ml water
1 tablespoon not melted coconut oil or butter.
Make the cream:
1.Boil the water in a sauce pan, add the honey and coconut powder, coconut oil, On medium heat cook for 3-4 minutes.Let it to chill 20 minutes
2.Whisk the coconut cream white until you get a foam, add the honey and cacao.
3.Once the mixture from sauce pan is cold or room temperature, slowly pour into the coconut cream, and with the hand blender mix it a few minutes. Place the bowl in the fridge.
Preheat the oven for 180C.
1. Divide the eggs, and mix the yolks with Stevia, water ,oil and lemon zest.
2.Whisk the egg whites with a pinch of salt until is foamy, than slowly add to the egg yolks, and mix it from the bowl down to the top, careful we still need the foam, gradually add flour the coconut flour and tapioca flour.
3.Pour the mixture on a baking paper spreading to corners. Bake for 12-15 minutes.
4.Immediately loosen cake from sides of pan and turn upside down onto towel. Carefully remove paper. Trim off stiff edges of cake if necessary.
While cake is hot, carefully roll cake and towel from narrow end. Cool on cooling rack at least 30 minutes.
5.Unroll cake and remove towel. Spread the cream over cake. Roll up cake. Spread the cake with the remaining cream and decorate after your wish. I have used pistachio and pears.
