Grated pumpkin pancake

This is a very tasty and easy appetizer. Use plain yogurt or add different condiments, like garlic parsley, mint, basil. You can use zucchini or potato instead of pumpkin.



Ingredients :
1 kg grated pumpkin
2 eggs
2 clove garlic,
1 teaspoon salt
half teaspoon ground pepper
3 tablespoon semolina or grits

1. Mix all the ingredients in a large bowl and live it to sit for 30 minutes.

2. Heat oil in a cooking pan,spoon the pumpkin mixture in pancake form in the oil, fry them in both sides until golden brown and drain them on a paper towel before serve therm.
Serve it hot or cold.
