Whole wheat cinnamon and cacao bread

This recipe is for those who can not eat the white flour or simply they want to try a healthy sweet bread recipe. For this recipe I use in 100% stone milled whole wheat flour and Stevia instead of sugar.



Ingredients:
350 gr whole wheat flour
1 egg+ 1 yolk
4 teaspoon dry yeast
half teaspoon sugar
10 gr Stevia
5-4 tablespoon cinnamon and dark good quality cacao powder
300 gr melted butter +100 gr
1 pinch salt
140 ml warm milk


1. Mix the yeast, sugar and milk, let this to stand for 8 minutes.

2. In a big bowl mix the flour, egg, salt, butter, Stevia. Pour the yeast mixture on the flour and start to knead the dough for 10 minutes. 

3. Sprinkle with a little flour if the dough is not enough elastic and smooth. Place the dough in a bowl, sprinkle with flour, cover the bowl and let it to rise, to double his size.

4. Roll out the dough, brush the 100 melted butter on it. Mix the cinnamon with cacao add 2 tablespoon water and brush the dough with the mixture. 

5. Cut the dough in two, and roll on both separable an spin them around.

6. Put the spin dough in the pan, cover and let to stand another 30 minutes. 

7. Brush the yolk on the top and bake in preheated oven on 170 C for 35 minutes.
