Sweet frittes or Czech Republic pancake (Dalkel)

   Czech Republic is not only a beautiful country, but they have very tasty food  and an amazing culture. 
   The Czech cuisine is close to Slovakian and Hungarian cuisine, maybe this is the reason why I like it so much, in Hungary they call it tarkedli, the Germans Dalkel. 
   This recipe is one from the basic recipes what people use to bake for dinner, breakfast or even special occasion, but you need to know that every household have their secret ingredients or way to prepare it. 
The taste and shape is a bit similar with the American pancake. 





Ingredients:

400 gr flour 
2 1/2 teaspoon dry yeast
500 ml lukewarm milk
1 teaspoon vanilla sugar
4 tablespoon sugar
lemon grated peel to taste
oil to bake 
jam to serve

1. Put the flour in a bowl , make a hole in the flour, add the yeast, half tablespoon of sugar and the half amount from milk, let it to rise a few minutes.

2. Add the egg yolks to the mixture, pour the milk in the bowl and add the other half of milk, mix it,cover the bowl and let it aside for 45 minutes.

3. Whisk the egg whites and slowly add to the raised dough, mix it with a wooden spoon , cover the bowl and let it to rise another 10 minutes.

4. Pour 1 tablespoon of oil in the pan and heat up the, use a oily spoon to drop spoonfuls of the batter into oil and fry each side for a few minutes. Flip when you see the edges starting to get brown and golden. You will need to use oil only to the first fries. 

Serve warm or cold, drizzle with some icing sugar on the top or just add some jam or Nutella.
