Spinach and meatballs (paleo)

Since I had some spinach in the freezer I thought to prepare a healthy lunch from it. I added coconut cream instead of milk, because my lactose intolerance, but you can add soy or cow milk, if you don`t follow paleo diet.




Ingredients :

1 bag defrost spinach
2 tablespoon coconut cream
2 smashed garlic
2 tablespoon olive oil
For meatballs:
250 gr minced meat
groves smashed garlic
1/5 teaspoon ground black pepper
1 teaspoon salt
1 pinch of ground cumin
1 egg yolk

1. Mix all the ingredients for meatball in blender or by your hands and let it aside for 10-20 minutes.

2. Form little balls from the meat and fry them on olive oil.

3. Pop the smashed garlic in the oil, let it to fry 1 minutes, until you feel the smell of garlic.

4. Pop the spinach ground pepper and salt on the garlic, on medium fire cook for 10 minutes, than add the meatballs and coconut cream and cook another 5  minutes.
