Carrot bites or the vegetarian bites (paleo, dairy free)


   How I had a lot of carrot in my kitchen I thought to make some delicious healthy little pancake from grated carrot, more some bites than pancake size. I say pancake and not balls, because I let the carrot zest, and if you use the zest also you will need more flour to form some nice balls.
   I made the recipe dairy free and can be consumed even by paleo diet (cave man diet) followers.


Ingredients:

3 large carrot (if you have chance use organic)
1 large egg
4 tablespoon arrowroot flour
1 clove smashed garlic
1/5 tspn ground black or white pepper
1/5 tsp kosher or sea salt



1. Peel the carrot and shred on the smallest holes from the grater.

2. Place the shredded carrot, eggs, garlic, salt, black pepper and flour in a blender and blend in until combine, 1-2 minutes.

3. Heat a large nonstick skillet over medium heat with 1 tablespoon of olive oil. Spoon the batter onto pan. Cook until the pancake bottom is golden, than carefully turn pancakes over, cook 1 minute or until bottoms are lightly browned, repeat procedure until you have batter.
