Savoury Paleo Broccoli Pancakes (Fritters dairy-gluten, and nuts free)

      This amazing broccoli fritters will enjoy also the meat lovers as a side dish.
      With a base of broccoli and eggs, these pancakes are healthy, veggie packed, protein rich and totally satisfying. I even threw in a few smashed garlic and ground pepper. They also happen to be gluten free, grain free, and they definitely don’t need syrup.
      These make for an awesome lunch too, for they are highly portable and you can eat them warm or cold. They reheat beautifully in the microwave: just pop them in there for a few seconds, maybe a minute. Fry some mushroom on a pan and pop on the top of broccoli and sprinkle with fresh parsley.

1 mug blended raw broccoli
1 mug grated carrot
1/4 tsp salt
1/4 tsp ground pepper
1 egg
3 tbsp arrowroot flour
1 tbsp Pshyllium husk

1. In a bowl mix all the ingredients.

2. Heat a skillet over medium high heat. Add the coconut/olive oil. Drop the batter by about two tablespoon amounts into the hot skillet. Fry until golden brown and flip. Repeat with the remaining batter.
