Gingerbread paleo keto cookies

Not only as az Xmas cookie. You can add more chocolate chunks, or nuts to have your family favorite paleo cookies.



Ingredients:

1 large egg
1 tspn vanilla aroma
1 tspn gingerbread spice
1 tspn Stevia
1 tbspn honey (you can add Stevia or xylitol ect. if honey do not fit in your diet)
3 tbspn olive or coconut oil
1/2 can coconut milk
5 tbspn coconut flour
4 tbspn arrowroot flour
3 tbspn desiccated coconut
1 tspn baking powder
1/2 tspn baking soda
1 tbspn apple vinegar or half lemon zest
cashew and dark sugar free 80% cacao chocolate


1. In a bowl mix  egg with vanilla ,gingerbread spice,  Stevia, honey, olive/coconut oil, coconut cream or milk.

2. In another bowl mix the coconut flour and arrowroot flour.

3. In a mug add the baking powder,  baking soda and pour on it the apple vinegar or half lemon zest. Mix it well and pour the mixture on the flour. 
Add the desiccated coconut , cashew, chocolate chunks and mix 

4. Pour the egg mixture on the flour and mix until combine. You have to have a soft batter. Form little balls, size of a walnut and place them on a baking tray. You should sprinkle your tray with a little arrowroot or tapioca flour. Use a wet spoon to "push" a bit the top of the balls. Add more chocolate or cashew if you wish.

. Bake on 180C for 13-15 minutes.
First you cookies will be soft, so let it to chill a few minutes before eating them.
