800-900 gr broccoli
1 clove garlic
150 gr yogurt or 80 gr sour cream
2 tsp salt
1 tsp ground black pepper
1 cube unsalted vegetable or chicken stock
1.Peel the potato, cut in cubes and add to 1,2 L of water with the garlic. Bring it to boil, add the salt and cube stock.
2. Clean the broccoli and cut in flowers, add to the boiling water. Cook for 10 minutes or until broccoli is soft.
3. Pour the half soup in a blender and carefully start blender, until is puree. Pour into a clean pot and add the other half to the blender. I used a hand (stick) blender.
4.Add salt and pepper, to taste, and then replace to low heat.
5. Mix the yogurt with 2 tbsp of broccoli soup than add the mixture to the soup. Bring it to a boil.
Serve hot or cold.
