Strawberry jam without sugar

One of my favorite fruits are strawberry. Back in Europe we use to  make many types of jam with or without sugar. 
This homemade jam doesn't contain any nasty preservatives, gelatin, or refined sugar which most conventional jams contain.
Homemade jam are welcome  all the time on our breakfast toast or on our favorite cakes. Store the jam in sterilized jars topped with metal or glass lids, place them in the fridge or pantry to have homemade jams all the year. 


Ingredients:

500 gr fresh or frozen strawberry
half lemon juice
2 gr Stevia
half teaspoon rose water

1. Cut the strawberry in cubes, place them in a saucepan, add the lemon zest and on low heat cook until the strawberry release some of their juices and  mixture boils slowly. Now add the Stevia and the rose water. Cook another 5 minutes on low heat, stir it continually with a wooden spoon.

2. Mix the jam with a stick blender to not have a lumpy strawberry jam.

3. Pour carefully in a jar while the jam is hot and place the lid. Place the jars in a dark place and put some covers on it,let it ther until chill, this will take maybe a few days.

Do not forget all items used in the process of making jams must be clean. This includes any towels used, lids and jars and especially your hands.
