Manakeesh Zaatar

Is a popular Middle East food consisting of dough topped with thyme. It can be sliced or folded, and it can either be served for breakfast since it is the traditional breakfast pie or serve it for lunch. You can find it in all bakeries in Middle East. The manoosheh the singular form from the manakeesh word is   famous for being the Lebanese pizza.



Ingredients:

3 cup plain flour
2 teaspoons dried yeast
1 teaspoon sugar
1/2 teaspoon salt
2 tablespoon olive oil
1 cup warm water
1/2 cup Zaatar mix adding olive oil to make a slightly runny, add toasted  sesame seeds



1. Combine yeast, water and sugar and let sit for ten minutes. 

2. In a large bowl, add yeast mixture to the flour,add the oil and half cup at a time until all combined, add a teaspoon of water if needed to combine batter. 

3. Knead the batter, place it in a large lightly oil greased bowl, let to rise for 1 hour.

4. Roll out dough into 4 inch diameter rounds. Mix zaatar, oil and salt together and spread 2 tablespoon on the dough. 

5. Place dough on cookie sheet. 

6. Cook for about 13 minutes on 200 C or until the bottom of the batter turns light brown.

Serve with labne or olives, tomatoes and cucumbers.
