Chocolate biscuits

A really delicious chocolate cookie recipe, I am sure you will bake it many times . 
This is a great recipe to make with kids, as it's very simple and good fun for them.


150 gr icing sugar,
150 gr unsalted butter
2 large eggs yolks
270 gr self raising flour
35 gr cocoa powder
150 gr or 40 squares good quality chocolate (dark or milk)

1. Grease a large baking sheet and preheat the oven on 185 C.

2.Whisk together the butter and sugar together until smooth. Beat in the egg yolks, then add the flour and cocoa powder to make a dough. Turn out from the bowl and knead, then place it into the fridge for a few minutes. 

3. Roll about a third of the dough out thinly on a lightly floured surface, then cut out about 30 circles with the a 4 cm cutter. Place them on the baking sheet and put a square of chocolate in the middle of each one. Then roll the rest of the dough out. 

4. Cut out the same number of circles with a 5 cm cookie cutter and place them on top of the chocolate, pressing gently all the way round to seal the edge and keep all the chocolate in.
Bake in the preheated oven for 10 minutes.
