Ricotta healthy pancake

        Ricotta pancake it can be a  delicious dessert or if you wish than a great breakfast. You don`t have to suffer that you can not eat dessert or a tasty pancake when you are on diet, you have only to change some ingredients to have a perfect healthy breakfast. 



Ingredients:

350 gr unsalted Ricotta
2 eggs
1 grated lemon peel
1/2 teaspoon vanilla extract
3 gr Stevia
1/2 teaspoon baking soda
4 tablespoon ground raw oats or coconut flour
serve with sugar free jam or fruits after taste 

1. Mix together everything in a bowl and let it aside for 15 minutes.

2. Heath a little olive oil in a pan and spoon 2 tablespoon of batter in the pan, once is ready turn it over and fry the other side to. You can make bigger or little pancakes.

3. Serve with jam or fruit, lukewarm or cold.
