Paleo breakfast (dairy free, gluten free and sugar free)

       Since I had some really delicious no GMO sausage in the  fridge I thought to fry them on a bit of olive oil and eat them for breakfast. 
    I don`t know how are you in this, but sometimes I really miss the bread from my day.  I recalled that I have an amazing easy and delicious 3 minutes Shrek bun. (I named after the color of the bun, because is made with pumpkin seeds meal, the buns has a green color).

For bun
1 large egg
3 tbsp pumpkin seeds meal
1/2 tbsp grounded psyllium husk
2 pinch salt
1/4 tspn soda bicarbonate
1 tnsp olive oil
2 tbsp coconut milk or tap water
1 pinch thyme or oregano (season after taste)
pickled cucumbers

1. Dice the aubergine/eggplants , sprinkle with 1 tspn salt and let it aside in a sift for 30 minutes.

2. Mix the ingredients for bun in a mug and place in microwave for 3 minutes. Once your bun is ready turn upside down the mug, and take out the bun from the mug and slice it.

3. Slice the sausage and fry them on a bit of olive oil 2-4 minutes.
Dry the aubergine cubes with a paper towel and fry them in olive oil.

4. Slice the cucumbers.
