Paleo double layer coconut bar (paleo, dairy free, eggs free)

    The cookie is made entirely of unprocessed ingredients. Here we have a healthier version of a traditional chocolate bar. Is totally processed sugar, eggs, dairy and flour free. 
    For those who have nut allergy, you should let outside the roasted almond.


Ingredients
100 gr of chocolate with 80% cacao 
1 can of coconut cream
1/3 can desiccated coconut flakes
6 tablespoon dates paste
1/4 cup roasted almond
1 teaspoon Stevia

1. In a bowel mix the coconut cream and desiccated coconut. Add 1 tablespoon raw honey or 1 teaspoon Stevia, on low heat cook for 5 minutes.

2. Press the dough onto a baking sheet lined with parchment paper, and use your hands to create a uniform rectangle shape that is about 1/2-inch thick. 

3.Blend the roasted almond and mix with the dates paste, add 1 tablespoon of water for a soft mixture. Place the mixture on the coconut and pop in the fridge to set for 5-6 hours.

4. Once your mixture is ready and you can cut in bars you dates and coconut, melt the chocolate on hot steam (melt first 1/3 from chocolate, than add the other part to the melted chocolate and mix until is melting).You have to work quickly, the chocolate don't need to be hot or cold, in this way you will have a perfect cover.

5. Dip the bars one at a time and let cool on parchment paper. Once cooled to room temperature, add to the fridge.
