Homemade paleo Bounty bars (paleo, dairy, nuts free)
It is after paleo recipe and also nuts and eggs free. If you like to make in different shape , than I suggest for some little balls, add an roasted almond inside and roll in dark chocolate, way too good.
1/5 can organic coconut milk
12 tsp vanilla
1/5 can desiccated coconut flakes
1 teaspoon Stevia (or 1 tablespoon raw honey)
150 gr 85-95%cacao chocolate or paleo chocolate (I have used a brand without sugar)
1.In a saucepan mix the coconut cream, vanilla, coconut flakes & your natural sweetener. Heat gently over a low element, stirring until it is well blended and dissolved.
2. Spoon this mixture into a container lined with baking paper and press firmly down.Cool down your mixture in fridge, until it becomes firm. When set, cut into bars and then place in the freezer to completely harden.
4. Cover your cold coconut squares with melted chocolate. Make sure your coconut bars are freezing cold, and keep your chocolate sitting over the hot water while you work to keep it from thickening.
