Yep, is healthy and delicious, but we have a little secret, is not rice!!! Is blended cauliflower, steamed and fried, seasoned.
Can be served as side dish or as main dish if you add some bacon slice or eggs.
If you think is more a couscous than as rice, than go ahead and use this name, the texture looks like the same.
2 cup of blended raw cauliflower (use the flower and the stalk)
1 teaspoon salt
2 tablespoon olive oil
2-3 slice bacon , cut in small pieces
3 smashed garlic
1/4 thinly sliced onion
1/5 teaspoon ground black pepper
1. Heat the oil in a pan, add the onion and fry a few minutes, stirring once a time.
2. Pop the garlic and bacon into pan, stir a few times and place the blended cauliflower also and sprinkle with salt and black pepper.
3. Stir for 2 minutes, to not burn, than pour 100ml of water, stir a few times and cover the pan with a lid.
4. On medium fire fry for 10 minutes, stirring once a while, Sprinkle with more salt if needed.
Serve it hot , sprinkled with fresh parsley.
