Beetroot oatmeal cookie

A typical diet dessert what is health and easy to bake. These little cookies are almost too healthy to be called a cookie. You should try this recipe if you want to eat something new or you are a fan of healthy desserts. It won`t be so crunchy as the oatmeal cookie. 
You can use cacao instead of chocolate custard and sugar instead of Stevia, but than won`t be healthy or dietary anymore.


Ingredients:

one medium beetroot 
1,5 cup oatmeal (grind)
1 tsp ground ginger
12 dkg unsalted butter
1 egg + 1 yolk
10 gr Stevia or 15 gr icing sugar
2 tsp chocolate custard or 1 tsp cocoa
1 tsp baking powder
half tsp baking soda

Preheat the oven to 180C.
1. Blend the beetroot but remove the juice.

2. Melt the butter on low heat than. Beat the eggs with Stevia or sugar and add the butter.

3. Mix the grinded oatmeal whit ginger, baking powder, chocolate custard.

4.Mix the beetroot with the butter egg mixture.

5. Add the oatmeal the beetroot mixture and stir it well.

Bake for 12-14 minutes. You can add grounded nuts to be more crunchy
