Hungarian Ratatouille or Lecso
Lecso in English sound like Letcho is an Hungarian thick vegetable ragout what can be consumed for breakfast, lunch or even for dinner. You can serve with fried bacon, rice, pasta, frankfurters or white bread. Preferred is to use banana peppers and Hungarian wax peppers, but green bell peppers (capsicum) will also work.
Ingredients:
0,5 kg bell pepper
1 banana pepper
750 gr tomato
2 cloves of garlic
2 big onion
1 tsp salt
2 tsp ground black pepper
3 tsp red ground pepper (paprika)
1. Cut the onion in pieces and fry in 2 tbsp of olive oil or cooking oil until is golden brown. Remove from heat and sprinkle with the paprika and black pepper
2. Wash the peppers and chop them than add to the onion. Add 1 dl of water, cover with a lid and let to cook on low heat for 10 minutes .
3. Wash the tomato and cut in pieces and to the pepper. Add the smashed garlic .
4. Cover with a lid and let another 10 minutes to cook or until mixture resembles chunky tomato sauce, until soft.
