Tabouleh salad

It is a traditional middle-eastern freshly parsley salad. Tabouleh is a verdant salad you can put together with vegetables and herbs that are available all year. Feel free to add some chili for a little heat. 




Ingredients:

half cup bulgur
1 tbsp olive oil
2 cups finely chopped fresh flat-leaf parsley (from 3 bunches)
half cup finely chopped fresh mint
3 medium tomatoes, chopped
2 Lebanese cucumber, chopped (if you use European than you should take out the seeds, use a spoon for this)
1 fresh lemon juice
half chopped onion
3/4 tsp salt
1/4 tsp ground black pepper



1. Pour one cup of boiling water on the bulgur and cower the bowl, let it stand for 20 minutes.


2. In a large bowl add the parsley along with the mint, cucumbers, tomatoes and onions. Add the soaked bulgur along with the dressing and mix everything together.
