Chinese chicken with rice

Chinese chicken is welcomed every month on our table, we love to eat, very easy to prepare. We use to eat for dinner, but sometimes I manage to hide from it some leftovers in my lunch box.
I use all the time low GI rice, more healthier and better for people who suffer from diabetes and I think our health is the most precious thing in our life, so we need to take care of it.


Ingredients :
200 gr boneless chicken breast
1 can straw mushrooms
half big onion
1 big carrot
1 bell pepper
2-3 little pickled cucumber
2 tablespoon soya sauce

1. Cut in half or third the mushrooms and souk them in water for 20 minutes.

2. Cute the chicken breast in cubes, and fry them in a hot plate in 1-2 tablespoon olive oil. Fry them until they turn white, once they are white pop them on a plate.

3. Slice the onion,carrot and bell pepper, pop them with the mushroom in a hot pan or wok in 1-2 tablespoon oil, stir with a wooden spoon, fry them 6-8 minutes, then add the soya sauce fry another 3 minutes, pop the chicken cubes, and sliced cucumber, and fry for 5 minutes.

4. Serve with rice,  add some chilly to taste.
