Spaghetti Milanese 

Is one of my favorite pasta recipe, but you also need to know how many households so many recipes for this  Italian tastiness. Some use raw eggs for recipe, some use canned tomato, but others have their own tomato sauce recipe for the pasta.
Pasta Milanese is a St. Joseph’s Day tradition for Sicilians.

Ingredients :

1/4 cup extra virgin olive oil
1 bulb diced fennel
2 onions sliced
2 smashed garlic cloves
4 anchovy fillets

1 tablespoon sugar
1/4 cup tomato paste
1 teaspoon fennel seed toasted, ground
2 cans diced tomatoes
750 gr oz can of tomatoes
5 fresh basil leaves
1/2 teaspoon oregano
1 teaspoon ground red pepper
500 gr pounds spaghetti 


1. In a large saucepan, heat olive oil, add fennel and onions, cook until browned and caramelized (stirring occasionally).

2. Add the garlic, then stir in the anchovies and cook for a couple of minutes. Stir in the diced tomatoes and the can of tomatoes, (crushing them with a fork). Add the sugar, tomato paste, ground fennel, basil, oregano and ground red pepper. Simmer sauce for 35 minutes, stirring occasionally on medium heat

3. In a large pot, cook the pasta, drain.

4. Combine some of the sauce with the pasta. If the sauce is thicker than you like add the reserved pasta water until you get the desired consistency. Add some extra cheese (Parmesan or any other cheese)
