Healthy  Eggs Benedict for breakfast

   I was carving since a few days after Eggs Benedict so I thought to make this weekend. I don`t know how you feel about this amazingly delicious eggs but for me they are the food from Haven.
    I love the taste of smoked salmon on a warm homemade bun and the juicy yellow from the eggs what is flowing on the salmon when you are cutting it.
   After you can see on the photo I made some changes in the recipe to be more healthy, in this way I cut some calories, but I assure you even like this it is so tasty that you will want to eat once a week.


Ingredients:

1 homemade bun, cut in 2
1 thin slice smoked salmon
one bunch of mixed salad
1 egg
1 pinch of ground white pepper
2 tbsp vinegar


1. Bring a deep saucepan of water to the boil (0,5-1 L) and add 2 tbsp vinegar. Break the egg into a mug. Swirl the vinegared water and carefully add the egg in the barely simmering water. It will curl round and set to a neat round shape. Cook for 2-3 mins, then remove with a slotted spoon.

2. Slice the bun in 2, place the salad on it, add the smoked salmon and place the poached egg on the top, sprinkle with ground pepper.
