No bake raw coconut lemon tarte (paleo, dairy free)
Since I am suffering from lactose intolerancy I have a hard time to eat dessert in the city and because I am a sweet tooth person this is worst.
I have been leaving in Emirates since 3 years and the Arabic food made me to gain a little in my weight, so I am following now the paleo diet, and must say that has effect on me. I know many of you will say that is not good to eat meat every day , but this is the reason why I make every second day vegetarian food, to make a balance.
3/4 cup almond
6 tablespoon dates paste
half lemon zest
1 can coconut cream
4 tablespoon coconut flakes
3 tablespoon coconut flour
1 tablespoon chia seeds
1. Blend together the dates paste, lemon zest and almond. If you don`t have a blender what ground almond, than you should use almond powder, also instead of dates pasta you can use medjol dates soaked in water.
2. Place on a tray or plate the mixture and place in the fridge for 20 minutes.
3. Whisk the coconut cream with coconut flakes and coconut flour until you get a fluffy texture, than add the chia seeds.
4. Place the coconut mixture on the dates-almond mixture and pop in the fridge for 1-2 hours.
