Healthy chickpea salad


This recipe is extremely versatile, as it makes a great side dish, or quick and healthy snack by itself. I know many people use Parmesan cheese and cilantro for this salad, but once you need to use feta cheese instead of Parmesan and mix in some chopped fresh parsley and chopped green onion or shallot.




Ingredients:

2 can chickpeas
1 green onion
1 tablespoon olivie oil
half lemon zest
2 pinch salt
1 baby cucumber
1 clove smashed garlic
parsley


1. Drain and rinse chickpeas. Place in a medium bowl. Wash and dice the cucumber and onion to small bite size pieces. Add to the bowl with the chickpeas.
2. Crumble feta and add to bowl along with the olive and lemon zest and smashed garlic, sprinkle your salad with some parsley. Allow to marinate for a little while and serve at room temperature.
