Veggie pancakes (paleo, keto, dairy free, gluten and flour free)
Since I made my first veggie pancakes I am making every week some for breakfast or lunch. Serving with cucumber, fried mushroom or tomato. For those who do not follow the paleo diet, you should add on the top 1-2 tablespoon of Greek yogurt.
Ingredients:
1 mug blended raw broccoli
1 mug blended raw zuccini
1 mug blended raw carrot
1 large egg
2 tbsp arrowroot flour
1 tbsp psyllium husk
1/4 tspn ground black pepper
1/4 tspn salt
2 smashed garlic
1 pinch chilly
1. In a big bowl mix all the ingredients together or you can pop them in the blender and blend a few seconds.
2. Let is aside for 20-30 minutes.
3. Heat a little olive oil in a pan and use a spoon to add the batter in your pan. Fry them in both sides.
